PhD Pies #3: Chicken Sausage Pies
Also: about my box grater, freshly shredded cheese, and a Costco find
Welcome back, everyone. It’s been far too long since my last post! Since the last time around our family has welcomed another kiddo and a whole semester has passed. The spring semester is now well on its way. I came back to draft a new post and found this draft sitting here, ready to go out. So here you go! Will try to get back into a more regular cadence!
🍕Pizza Feature
Chicken sausage on pizza is great. Even better when paired with roasted red pepper (available in a jar from Trader Joe’s)!
🛠️Gear Highlight
This Kitchen-Aid box grater is clutch. Making the move from store-bought shredded cheese to shredding your own from a block is a quick and easy way to up your pizza game. What you may not realize is that the shredded cheese you buy in the bag at the store is coated to help prevent mold and keep it from clumping. This box grater is great, easy to clean, and even comes with a small container that fits under the grater to easily collect the shredded cheese. One tip: make sure to clean it shortly after using it if you can. It's much easier to clean before the cheese hardens!
🧑🍳Recipe of the Month
This month I want to talk about toppings. My go-to choice for cheese is mozzarella from Trader Joe’s. It’s pretty important to shred it yourself since the cheese that you buy pre-shredded at the store is coated to prevent it from sticking and clumping. But unfortunately, this additional coating means it doesn’t melt as nicely.

This month you get a picture of me with my latest Costco find—a 10 lb. bag of King Arthur bread flour. This is the flour I like to use for my New York and New Haven-style doughs and this price can’t be beaten.
